Quick Apple Crumb Cake

"Here's a good dessert to make when you're in a hurry, but want something that tastes like it was much more complicated."

• Serves: 6

ingredients

• 18 1⁄2 ounces yellow cake mix
• 1⁄4 cup butter
• 2 eggs
• 1 cup light sour cream
• 21 ounces apple pie filling
• 1⁄3 cup brown sugar
• 1 teaspoon cinnamon

directions

1. In a mixing bowl, combine cake mix, butter and 1 egg until crumbly; reserve 1/2 cup.
2. Press remaining crumb mixture into 8-inch square pan.
3. Blend remaining egg with sour cream; spoon over crust.
4. Stir apple filling with brown sugar and cinnamon, spoon over sour cream mixture.
5. Sprinkle with reserved 1/2 cup crumb mixture.
6. Bake at 350 for 40 minutes or until filling is bubbly and topping is lightly browned.
7. Cool before serving.

I liked this and it is easy to throw together. I did use a choc cake mix and my apples were chunky. Very versatile recipe !

This made a lovely, different kind of dessert for us. SO easy to put together! I didn't have apple pie filling and subbed chunky cranberry sauce...worked just fine. I think this would be spectacular using chocolate cake mix and cherry pie filling. Yum!
