- 1⁄4 cup butter
- 1⁄2 cup onion, chopped
- 1⁄4 teaspoon ground ginger
- 1⁄4 teaspoon ground nutmeg
- 1⁄8 teaspoon ground cinnamon
- 3 cups chicken broth
- 2 cups pumpkin puree, canned
- 1 cup half-and-half
- 2 tablespoons brandy
- salt, to taste
- pepper, to taste
directions
- Saute onion in butter until transparent. Blend in spices and broth. Bring to a boil.
- Stir in pumpkin puree and half-and-half. Reduce heat and cook until soup is heated through but NOT boiling, stirring occasionally.
- Blend in brandy.
- Salt and pepper to taste. Serve hot.
