ingredients
- 1 lb baby shrimp, cooked
- 1 lb king crabmeat
- 3 cups cooked rice
- 1 green bell pepper, chopped
- 1⁄8 - 1⁄4 cup milk
- 1 teaspoon salt
- 1⁄8 - 3⁄4 cup mayonnaise
- 1 cup chopped celery
- 1⁄2 - 1 purple onion, chopped
- 3⁄4 cup sliced almonds, toasted
directions
- Combine all ingredients.
- Chill all day or overnight.
- Serve on lettuce cups with croissants and fresh fruit.
- Enjoy!

Oh my goodness! This is an incredibly good salad! I hope you forgive me, but a small container of fresh crab at Sam's Club was over $30 this weekend, so I used surimi instead and compensated by using more shrimp than called for. Regardless, it's a wonderful salad. I love rice salads and this one is extra special. I loved the crunch from the celery, bell pepper, and onions. We're not much on mayonnaise, so used about half of what is called for and it's still creamy and moist. Thanks for sharing - this is going into my Best of 2022 file! Can't wait for this inflation craziness to be over so I can make it with real crab!

Wow, PotPie--this was scrumptuous! We had our kids and munchkins here for Father's Day and a few additional days. I served this salad along with another of yours over the days and it was a big hit. Instead of using king crabmeat, I chose to use Dungeness and since we were at the market with the chinese deli I got a large container of fried rice, let it cool and added the other ingredients. I used the lower end of the mayonnaise measurement and it worked out fine. Thanks for posting; we'll definitely make this one again!
