ingredients
- 1 cup oats, dry
- 2 scoops whey protein powder (1 servings worth)
- 1 1⁄4 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 2 egg whites
- 1⁄2 cup canned pumpkin
- 1⁄4 cup applesauce, unsweetened
- stevia (sugar-fee sweetener of choice) or Splenda sugar substitute (sugar-fee sweetener of choice)
directions
- Preheat oven to 350.
- Mix dry ingredients in bowl.
- Mix wet ingredients in a separate bowl.
- Combine dry and wet ingredients, blend well.
- Pour into muffin tins and bake for 10 minutes.

yes, i have had better tasting mufffins before, but i felt very good feeding these to my kids. and they really liked them (which is the real test - since it doesn't matter how healthy something is if no one will eat it :)). per Lynnster, the 1/2 tsp baking powder should read baking soda (she has submitted a correction already). i subbed real sugar for the Splenda since that was all i had and also added 3 Tbsp of mini choc chips as insurance that my kids would try them. don't think they will last long in my house. thanks lynnster
