Prawns Amaretto

- 4 large prawns
- flour
- 1 tablespoon butter
- 1 tablespoon brandy
- 1 tablespoon Amaretto
- 1 dash dry white wine
- 1 teaspoon orange juice
- 1⁄8 teaspoon orange zest
- 1 tablespoon whipping cream
- 1 teaspoon chopped parsley
directions
- Coat prawns with flour. Melt butter in small skillet. Add prawns and saute until browned on both sides. Remove from pan and add brnady, amaretto, wine, orange juice and peel. Cook stirring until liquid is shiny and reduced. Add cream to sauce, heat until sauce is slightly thickened. Add back prawns, sprinkle with parsley.

I would urge other cooks to try this recipe as Janeydoe intended it: for one (at a time), and probably as a starter, with something else on the plate as well. I liked the exotic promise of the ingredients, but had to multiply by 6, which isn't really fair ... I defrosted 800g of large shrimps (it came in one block). I made the recipe exactly as given, but 1 Tbsp had to become 6. It IS exotic-tasting; "different" is perhaps the word. Janeydoe didn't give a lot of info. LATER NOTE: I thought my husband would not like it, but he says it's great! It's been standing in a warming oven for a while (he had to eat later than me) and the flavour has mellowed, whereas I found it a bit sweet before.
