- 1 russet potato, cubed
- 1 red potatoes, cubed
- 1 sweet potato, peeled and cubed
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 teaspoons fresh thyme, minced
- 3 garlic cloves, minced
- 1⁄4 cup chicken broth
directions
- Preheat oven to 375 degrees Fahrenheit.
- Combine all ingredients in a mixing bowl and toss to coat.
- Roast uncovered in a casserole dish for 50 to 60 minutes or until tender.

Great recipe, great flavours. I used a red potato, and ordinary potato and sweet potato, plus I only had lemon thyme growing so used it. I actually think the lemon thyme blended well with the other flavours. Actually only took about 40 mins in my little turbo oven to cook. Will make this again, it will be a favourite.
