- 250 g caster sugar
- 125 ml cream
- 125 ml milk
- 200 g butter (softened)
- 3 eggs
- 1 teaspoon vanilla
- 250 g flour
- 1 1⁄2 teaspoons baking powder
directions
- Preheat oven to 180 C, grease 24cm springform tin.
- Melt sugar until caramelised (don’t stir).
- Whisk in milk and cream.
- Whip butter in bowl, pour in caramel.
- Beat in eggs one by one.
- Add vanilla and whisk until thickened.
- Whisk in flour and baking powder.
- Bake for 25 to 40 minutes.
- Dust with icing sugar.
