  • Preheat oven to 180 C, grease 24cm springform tin.
  • Melt sugar until caramelised (don’t stir).
  • Whisk in milk and cream.
  • Whip butter in bowl, pour in caramel.
  • Beat in eggs one by one.
  • Add vanilla and whisk until thickened.
  • Whisk in flour and baking powder.
  • Bake for 25 to 40 minutes.
  • Dust with icing sugar.
