Peanut Butter, Banana and Sultanas Sandwiches or Pinwheel Style

ingredients
- 1 slice whole wheat bread (wholemeal bread)
- 1 slice white bread

Filling
- 1 1⁄2 tablespoons peanut butter, smooth
- 1⁄2 large banana
- 1 tablespoon sultana
- 1⁄8 teaspoon cinnamon, to taste
directions
- Cut crusts off from both slices of breads and with a rolling pin flatten both breads.
- In a small bowl, mash bananas, and then add peanut butter, sultanas and cinnamon.
- Evenly spread filling over both breads. Roll bread up starting from the long side.
- With a sharp knife cut into slices to form pinwheels. Enjoy.

MMmm, eating this right now for breakfast. I made it open-faced (short on time) and had to use a handful of frozen, sliced bananas (didn't have any fresh). I used Jif creamy (the best brand of pb imho :D ) and the cinnamon and sultanas and spread this on Sprouted Multi Grain Bread from Fresh & Easy Market. I halved the recipe but still have some left, so stuck it in the fridge - hope it'll be okay in there and the bananas won't get all weird from thawing out. I have always enjoyed pb and banana sandwiches of varying combinations; this one is part of my repertoire now. :) Thanks Chef FloWer. Made as a recipenapped recipe for NZ/Aussie Swap #14.

For me, this was a 5 star recipe for the kid-pleasing factor alone! No, it's not gourmet food, but my 7 year old sure thought it was :) I used whole wheat bread as that is the only kind I ever have in the house, and made this for my daughter for breakfast. She gobbled it right up and asked for more. I found them quite easy to make, and not so messy once you get the trick. OK, now you want to know the trick, right? Here you go: Don't spread the filling on too thickly or it will just mush out the sides. Thanks for a great recipe floWer!! Made for the Aussie Swap :)
