Peachy Chicken

"I got this from a mailer and wanted to post it for later rather than keeping another scrap of paper! Looks good and would be a good summer recipe."

  • Preheat oven to 375 degrees.
  • Add flour, salt and pepper to storage bag and shake chicken breasts to coat.
  • Place butter and cooking oil in frying pan and add chicken; brown on each side.
  • Place browned chicken in a greased casserole dish.
  • Mix orange juice, vinegar, brown sugar, basil and nutmeg together and pour over chicken breasts.
  • Cover and bake for 1 hour and 15 minutes basting often.
  • Removed from oven; place peach halves between chicken pieces and baste.
  • Cook uncovered in oven for 15 more minutes.

  1. Very nice result.. Full of flavors. made this as written though I subbed apple juice for the orange juice. Peaches were a nice fit for this too. Made for a nice dish with one of my smashed mashed potato recipes. Made for Zaar Stars.
     
  2. For this recipe I chose to use pineapple instead of orange juice in our recipe. After reading the reviews I also chose to add some of my moms Peach jam to this recipe to give it more of a peachy flavor. <br/><br/>We loved how good this recipe turned out. The flavors blended so well together.<br/><br/>I would say this is a very nice recipe to try.
     
  3. This was very good. I would double the peaches next time. I used chicken thighs (bone in) so it took longer to cook. Kids gobbled it down.
     
  4. This recipe was really good! I used thinly sliced chicken breasts, so I decreased the cooking time. I would also cut the number of breasts from 6 to 4 to make sure I had enough liquid to baste with. Loved the basil/nutmeg combo. The flavor was wonderful.....didn't really get much flavor from the peaches, but the warm peaches were a nice side dish! Thanks for sharing. Made for Photo Tag.
     
  5. This is one of our favorite dinners, and anyone who we share it with asks for the recipe. So good! I like to make sure my chicken is browned really well in the frying pan, and we also like to add extra peaches. We recently found out this freezes well. We make a double batch and put the extra in freezer bags to pull out and reheat for a quick, delicious meal! We think it's even better the next day, or as a freezer meal, after everything marinates.

<p><span><strong>I am a stay at home mom to two wonderful boys; Joshua (8years), Kaiden (5 years), and baby GIRL, Madalynn (19 months)! &nbsp;I also have&nbsp;two fur babies (cats); Kobee, AJ; we had to put our youngest cat Sly down Jan 2014. :(. I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
