"Just really good potatoes that travel well and are perfect for potluck meals."

ingredients

• 10 -12 potatoes, about one potato per serving
• 8 ounces cream cheese
• 12 ounces sour cream
• 1 tablespoon parsley flakes
• 1 teaspoon garlic salt
• salt and pepper

• Optional

• finely minced chives (scallion tops) or green onion top (scallion tops)

directions

1. Peel and cut potatoes.
2. Boil potatoes in salted water until tender, 15 -20 minutes.
3. Drain potatoes and return to pan.
4. Combine all ingredients and mash together until smooth.
5. Place mashed potatoes into a greased 13 x 9 pan.
6. Bake, uncovered, for 45 minutes at 350°F.
7. Can be made ahead, refrigerated, and then baked, but add 10 minutes to the baking time.
