- 2⁄3 cup olive oil
- 1⁄2 lb pork tenderloin
- 3⁄4 cup onion (chopped)
- 2 garlic cloves (diced)
- 1⁄2 lb fish
- 1⁄2 lb lobster
- 3⁄4 lb shrimp
- 12 clams
- 12 mussels (de-bearded)
- 1 teaspoon paprika
- 6 artichoke hearts
- 1 lb chicken, cut up (thighs and legs work best)
- 4 links chorizo sausage (sliced 1/2-inch thick)
- 1 green pepper (optional)
- 1 cup peas
- 4 cups rice
- 2 large tomatoes (diced)
directions
- Prepare rice.
- Cook pork, chorizo, and chicken in olive oil, with onion, garlic, and artichoke hearts.
- Add tomatoes, cooked rice, seafood and remaining ingredients cover, stir occasionally.
- Cook until seafood is done and the clams and mussels are open.
