I had some pulled pork on hand. I added a can of Rotell tomatoes and green chili's and some taco seasoning and warmed it up. I put some street taco shells in the micro wave ( corn & flour) with a wet paper towel. The corn ones I draped over 2 oven racks and baked for 5 min. or so. I assembled the taco in a pan with the meat and cheese and baked. I had some coleslaw mix that I added jalapeno peppers with some red onion and the juice of a lime some cilantro and a little sugar and white wine vinegar.
