I had some pulled pork on hand. I added a can of Rotell tomatoes and green chili's and some taco seasoning and warmed it up. I put some street taco shells in the micro wave ( corn & flour) with a wet paper towel. The corn ones I draped over 2 oven racks and baked for 5 min. or so. I assembled the taco in a pan with the meat and cheese and baked. I had some coleslaw mix that I added jalapeno peppers with some red onion and the juice of a lime some cilantro and a little sugar and white wine vinegar.Reply

Very good! I used this recipe as a base and fluffed/added some items. Steps I took: (1) Chopped 1 med. Yellow onion and added it to my meat when browning. (2) Drained meat juice, Added Taco Seasoning, and added some Cayenne Pepper for a kick. Added less Tomato Sauce, and opted for a small can of diced tomatoes with chilies(Drained). (3) I let this simmer and then layered my 9x13" pan. (4) I stuffed each taco slammed full with meat, then topped with one Full bag of Mexican shredded cheese. (5) Half-way through baking, I added some fresh chopped tomatoes on top of each taco and added some fresh chopped Green Onions or (Chives) for decoration and fresh taste. (6) Once finished, I created a topping bar on the counter, Sourcream, Fresh Chopped onions, Fresh Chopped Tomatoes, Taco Sauce, Salsa, etc. Was a HUGE hit! My Pregnant wife loved it! I will be adding this to the cookbook!1Reply
