Oven Baked Salsa Chicken

"This is really simple with only 5 ingredients but tastes great. I usually use breast fillets & just pour the whole jar of salsa over them with the other ingredients then add a little cheese sprinkled over towards the end of baking. Mmmm Mmmm! Recipe from Masterfoods."

  • Pre-heat oven to 180.C.
  • Combine chicken with all ingredients except lemon wedges in a baking dish.
  • Cook for 35-40 mins or until chicken is cooked through.
  • Serve with lemon wedges.

  1. I used a hot salasa (and used all the jar). I reduced the oil by half and would consider omitting it completely next time as I don't think it was really necessary. Next time, I'd use fresh corainder to finish rather than the dried parsley-it was easy but I don't think it added anything to the dish. We ate this over pasta with the cheese as suggested and some sour cream. It's a great recipe that has wonderful possibilities.
     
  2. Wow -- I can't believe that such an absolutely delicious dish like this can be so easy and quick to get into the oven. We all loved the lemony taste and it really brightened up the salsa. The chicken came out moist and tender -- it's a terrific recipe, Mandy, and thanks for posting it!
     
  3. What is not to like about a recipe that is this easy to put together and tastes good? I used boneless skinless chicken breasts and sprinkled with reduced fat cheddar for the last couple minutes. I served it alongside vegetable rice to make for a yummy and really easy meal. Made for 1-2-3 tag.

  5. I made this dish last night for dinner. The only change I made to it was that I marinated the whole breasts overnight in the salsa. I did not cut up the breasts. They made a lovely presentation with the salsa color and the nice parsley on top. Except for the almost overpowering lemon taste, it was good. I will make this again, but will put less lemon in it. I love lemon chicken but feel this dish should have more of the flavor of the salsa which was downplayed a bit too much. Thank you for the recipe.

Melbourne I live on a 5 acre property in the Dandenong Ranges Victoria, Australia, having moved from the burbs when I became pregnant with my now 15 year old daughter Alyssa. Once my daughter was born I became a stay at home mum as I couldn't bear the thought of putting her in daycare. She is the light of my life, I never imagined myself as a mum when younger but now wouldn't have it any other way. I love cooking and experimenting with new recipes so quickly become addicted to Zaar as it was previously known & still use it regularly. In addition to being my kids taxi :lol: I also spend my time, reading, gardening and of course shopping. I'm lucky enough that we have the space & so love growing our own fruits, vegies & herbs, this also means we have plenty of room for animals & at the moment have 2 dogs, Max, a Jackshund who's 6, Fletcher, a Kelpie who's 4, 6 cats Snowpea, Fergus, Ginger, Tango, Annie & Cookie, 4 chooks & 2 Ducks. As well as our pets, we also have a lot of native animals around our area, we have kangaroos, wombats, echidna's, possums as well as rosella's, galah's & Cockatoo's hence the name of where I live..
