Outrageous Muffins

I found this recipe off of a Soy Flour package from Bob Red Mill. They are pretty tasty muffins and a little healthier then the average.

ingredients
- 1⁄3 cup soy flour
- 1⁄3 cup brown sugar
- 1⁄3 cup cornmeal
- 1 cup whole wheat flour
- 1⁄4 cup wheat germ
- 3⁄4 teaspoon salt
- 1 cup ground almonds
- 1 teaspoon baking soda
- 2 eggs, beaten
- 1 cup yogurt
- 1 teaspoon vanilla
- 1⁄3 cup oil
- 1 orange, zest of
- 1⁄3 raisins or 1/3 currants
- 1⁄2 cup dried apricot, diced
directions
- Preheat oven to 350 degrees.
- Mix dry ingredients and dried fruit together in a large bowl.
- Combine liquid ingredients and stir into dry ingredients just until moistened.
- Batter should be lumpy.
- Fill oiled or paper-lined muffin tins 2/3 full.
- Bake in preheated 350 degree oven for 20-25 minutes.
