Outrageous Muffins

"I found this recipe off of a Soy Flour package from Bob Red Mill. They are pretty tasty muffins and a little healthier then the average."

  • Preheat oven to 350 degrees.
  • Mix dry ingredients and dried fruit together in a large bowl.
  • Combine liquid ingredients and stir into dry ingredients just until moistened.
  • Batter should be lumpy.
  • Fill oiled or paper-lined muffin tins 2/3 full.
  • Bake in preheated 350 degree oven for 20-25 minutes.
