Our Favorite Black Bean Soup

- 1 1⁄2 cups broth, I usually use a vegan chicken broth (Can be vegetable, chicken, or beef)
- 1 1⁄2 cups water
- 1 small onion, chopped
- 3 (15 ounce) cans black beans
- 1 cup salsa
- 1 -2 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon cilantro (dried or fresh)
- 0.5 (15 ounce) can corn
- salt, to taste
- 1 teaspoon chili powder (optional)
- sour cream (optional)
- green onion, diced (optional)
directions
- Mash one of the cans of beans with the juice with a potato masher. Drain and rinse the other two cans of beans and set these whole beans aside.
- Add salsa, garlic powder, chili powder, salt, and cumin to the one can of beans that were mashed, then set aside.
- In a pot bring the broth, water, and onion to a boil.
- Simmer until the onions are clear. Then add the corn and all of the beans to the pot (both the mashed and the ones not mashed).
- Stir well and then simmer at a low heat for about a half hour.
- Can serve topped with sour cream and diced green onions.

Definitely 10 stars for ease, a nice recipe to know when you don't have much time to throw a wholesome meal together. I had some previously cooked black beans on hand, so it was even quicker for me as there were no tins to open or drain. Made exactly as written, using slightly less chili powder than called for and fresh garlic instead of powdered. I'm not a big fan of boiling onions, and although the end result is very good here, for me it would have been 5 stars if I had sauteed the onions in some oil before adding the broth. Great consistency, so often black bean soups are really thick, I think this is just right. Thanks Enjolinfam!

I am NOT a soup person but I have made an exception for this soup. I altered your recipe by mistake and it was still delish!! I pulled out my blender added in one can of beans/salsa & all other spices and pureed it. In a pot I added 1 can of broth (I was too tired to measure) and onions and corn and let it come to boil. Then added contents of my puree. I completely forgot to add the other cans of beans and let the soup simmer for 1/2 hr!! My DH and I loved this soup.

This was very good. I used extra-spicy salsa, and it provided a nice kick to the soup. I loved the color the corn added to it. My soup didn't seem to be as thin as some pictured...I'm not sure why since I followed the recipe exactly as written. I made this for 2008 Favorites Cookbook Tag! Thanks for posting.

Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it!
We are a couple, Jason and Mollie, that loves to cook together. We have two wonderful DD's, Enjoli (9) and Emily (7) that make life so much more fun! I, Mollie, studied Nutrition so I try to make most of our meals healthy while still tasting great! Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available. Zaar has been a tremendous help!
