Orange Juice Muffins

ingredients
- 2 cups Bisquick
- 4 tablespoons sugar
- 2 eggs
- 1 teaspoon orange zest
- 1⁄2 cup orange juice (not concentrate)
directions
- Preheat oven to 400 degrees.
- Line a 12 cup muffin tin with paper liners.
- Combine all ingredients and mix well.
- Fill each muffin cup approximately 2/3 full.
- Bake for 15 minutes or until done.

DH liked these & gave them 4*. I liked them too, but think of them more as a work in progress recipe than a finished one. I had prob w/the prep. The dough was very dry & I was unable to mix all the dry ingredients into the dough, so I finally added more OJ to at least ½ cup total + 1 tsp orange extract as I had no zest. The dough was still very dense, but at least combined. When filling the muffin tins, I soon saw the prob yield would be 6 lrg or 8 med muffins. I opted for 8 & cook time was right on for that amt. The sweetness level was muffin-like, but the texture crunchy like a biscuit. Leftovers the next dy were much more biscuit-like than muffin. They would be a good breakfast or after school snack for kids + a good quick fix option. While it was fun to give Bisquick a muffin audition, they will not replace our other muffin favorites.
