Orange-Glazed Baby Carrots (Light)

ingredients
- 2 cups packaged peeled baby carrots
- 1 tablespoon butter or 1 tablespoon margarine
- 2 tablespoons orange marmalade
directions
- In a covered medium saucepan cook the carrots in lightly salted boiling water for 5 minutes. Drain, set carrots aside.
- In the same saucepan, melt the butter over medium heat.
- Add the carrots and orange marmalade.
- Cook and stir for 2 to 3 minutes or until carrots are tender and glazed.

This is a fantastic dish. Two of my very favourite foods....together. I used my own recipe #222217 . The only thing I did differently, was to add some fresh chopped chives. Mostly for colour. We will be having this again many times. When I asked DH "how are they?".....all he said way "GONE". He was smiling too. Trust me......that's a 10 from him. Thanks Redsie...for getting more veggies into Billy.

Sometimes the simplest dishes can be just so lovely. Was a little tired of my basic steamed carrots but didn't really want to put much effort into doing more. The flavor really hinges on the marmalade so use a good one. With two small additions the evening vegetable was transformed into something so nice I would serve them to company. I used light butter making this light dish even lighter. Delicious Redsie. Thanks.

Canadian girl that loves to cook for herself and for everyone around her!! I always enjoyed cooking but more so since I started taking better care of myself by eating healthier food (I am a Weight Watchers Lifetime member!). I still love my chocolate though!
