Orange Cranberry Scones

- 1 1⁄4 cups whole wheat pastry flour
- 1 1⁄4 cups , all purpose or 1 1/4 cups bread flour
- 1 1⁄2 tablespoons of grated orange peel
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1⁄2 cup butter, cut into pieces
- 1 cup dried cranberries, soaked in boiling orange juice for 5 minutes, drained, and patted dry
- 1⁄2 cup Greek yogurt
- 1 egg
- 1⁄3 cup honey
- 1 teaspoon vanilla extract
- 1⁄2 cup cinnamon sugar, topping (optional)
directions
- Preheat oven to 375*.
- Combine flour, baking powder, baking soda, salt and orange peel in a bowl; mix well.
- Add cut up pieces of butter and mix until mixture resembles coarse meal.
- Add cranberries, sour cream, honey, egg, and vanilla extract. Mix to a soft dough.
- Remove dough onto lightly floured surface and kneed 8-10 times. It wont take much.
- Use a rolling pine (I used my hands to press down) and roll dough out to 8" square. Cut into 4 squares and cut the squares into triangles.
- Sprinkle with cinnamon sugar topping if desired. (I preferred without the topping but rather served with a side of homemade whipped cream).
- Place in oven for 15-20 minutes or till golden brown.

I love to cook, I don't eat out very much because I always think to myself, I can make it better and then we get the bill and then I know I can make it better! I have high expectations when it comes to my cooking because I want to be able to cook as good if not better than my mom and grandma some day. I love to cook for others.
