One Minute Hollandaise Sauce

- 2 egg yolks
- 1 tablespoon lemon juice
- 1 tablespoon milk
- salt and pepper (optional)
- 1⁄2 cup melted butter
directions
- Melt butter in small measuring cup in microwave.
- In a separate bowl whisk together egg yolks, lemon juice, milk and S&P if using.
- Slowly whisk in melted butter a bit at a time to egg yolk mixture.
- Cook in microwave on medium heat, VERY important to whisk every 15 seconds for one minute or until done.
- Serve immediately.
- (for a more savoury dish substitute red wine vinegar for lemon juice and sprinkle in dried tarragon - chicken yumminess).
