Oatmeal Raisin Cookie (No Yolks Used)

I combined 3 recipe to make this one to make a good cookie. That is low in salt and fat. I use oilve oil instead of corn oil. This cookie is moist and has a good flavor. I use silicone mats on my cookie sheets so they don't stick.

ingredients
- 1 cup flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1⁄3 cup olive oil
- 1 1⁄2 cups guick oatmeal
- 2 egg whites, beaten
- 1 tablespoon apple butter
- 1⁄2 cup skim milk
- 1 cup brown sugar
- 1 cup raisins
directions
- Sift flour,baking soda and cinnamon set aside.
- In mixing bowl mix wet ingredents with sugar.
- Add flour mixture and blend well.
- Add oats and raisins mix well.
- Spray cookie sheets if not using silicone mats.
- Drop by 1 1/2 teaspoonfulls on cookie sheets.
- Bake at 375 for 12-15 minutes.
