Oatmeal "cookie" Muffins

"These muffins from The Inn at Monticello in Charlottesville, Virginia are said to taste like old-fashioned oatmeal cookies. I haven't made them yet, but given how much I love oatmeal, these are high on my to-make list! :)"

  1. I wasn't so sure about the amount of spices. I tasted the batter and thought it was too plain, but after I baked them, the taste was totally oatmeal cookie-like. Very nice flavor. I had a problem with them not rising. Not sure if it was the applesauce that makes the batter kinda runny, or if it needs more baking powder. I will experiment next time to see if more bp helps. Thanks for posting - was a nice Thanksgiving breakfast treat.

  2. These were moist and tasty! I followed the recipe except I didn't have any quick oats so used regular rolled oats instead. This worked just fine. Nothing like a cookie in a muffin form! I will use this again! Thanks for posting!
