Not My Grandma's Chicken Salad

ingredients
- 1 (3 ounce) package ramen noodles, crushed
- 1 medium size red pepper, chopped
- 1 medium onion, chopped
- 1 head romaine lettuce (or large package)
- 2 (12 ounce) cans chicken, drained
- 1⁄2 cup mayonnaise
directions
- Tear lettuce into small pieces and place into bowl.
- Add red pepper and onion.
- Add Ramen noodles.
- Add chicken and mayonaise.
- Mix well. Add Salt and Pepper for taste.
- Serve with tomatoes on your favorite bread and just by it self.

I made this on 6/09/09 for the " Summer Salad Snapshots "event and for my dinner. I did make a couple of changes due to what was on hand.Instead of the red pepper, some freezer dried red/green peppers were reconstituted and used. For the canned chicken, some leftover boneless fried chicken was diced up and used. Mixed everything together, and let chill for about 3 or 4 hours.Tasted, and decided it needed some more salt and pepper. I did add about 1/4 cup more of mayo to add a bit more moisture. Served with some iceburg lettuce and a slice of tomato on a homemade roll. I really enjoyed this different way of using ramen noodles. This will be made again. I LOVED this recipe. More importantly, my whole family loved it. I was surprised because my husband doesn't like mayo...he either didn't guess it was in there or didn't care! I give this recipe even more credit for being very budget conscious. I opted to serve this in tortilla wraps and took them for a 'to-go' type dinner - on one of those ultra busy nights. I halved all of the ingredients and still had plenty to serve 4 people. If you are looking for an EASY and INEXPENSIVE dinner or lunch, this would be the perfect recipe.

There is no seasoning in the recipe & I had to add a LOT of pepper. I think that in the future I'll try out some celery seed or seasoned salt. I used 16 ounces fresh cooked & shredded chicken instead of 24 ounces of canned and only a third of the lettuce but I still needed to add an extra 1/4 cup mayo. Other than that it made a great salad or sandwich filler. I didn't think the lettuce would hold up for leftovers but it's not bad enough to pick it out of the sandwich yet (19 hours later), but I couldn't eat it just as a salad anymore. This was very easy to make and one of my DH's favorite contest recipes. He appreciated the simplicity here. The ramen noodles added some crunch to a fairly normal salad. I reduced the recipe in half, but used a whole pkg of ramen. I also used a purple onion for color and added some celery. The recipe didn't mention the flavor pkt in the ramen noodles. I discarded it, but found the salad needed some seasoning so wondered if I should have included it. I was very liberal in adding Mrs Dash seasoning and pepper. I served this for a quick lunch with sliced tomatoes, fruit, & crackers. Good luck in the contest!

Hi! My name is Terri. I have been happily married for 28 years to Jim. We have 3 children, 2 girls and 1 boy.

I love to cook and love to try new recipes. My favorite cookbook is an old Betty Crocker Cookbook that I have had before I was married.
I like to sew, crochet and to do crafts. I am a 4-H Club Leader and I have a great group of kids this year. They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
I also like to go to auctions, yard sales and I am always buying items from the kids that they are selling to raise money for school, church or a youth group.
