This rub is deceptively simple, yet packs a punch!! I used it on pork butt chops and my wife went wild! I thought the paprika would be overwhelming, however, the meat was tender and flavorful. The paprika created a pleasing color to the chops. I know cooks always want to tweek but I suggest trying the recipe exactly first.

This recipe is also in the Neelys' 2009 book "Down Home with the Neely's; A Southern Family Cookbook." I used this recipe for my ribs and i could not believe how tasteless the meat was! I was generous and massaged the ribs really well with the rub, then I grilled them up. I am stunned that the Neely's are proud of this recipe. Am I missing something?? I'm stuck with all this dry rub now and I don't want to use it.
