Mint Chip Ice Cream Pie

- 8 ounces chopped semisweet chocolate, melted
- 4 cups crisp rice cereal (such as Rice Krispies)
- 2 pints mint chip ice cream, slightly softened
directions
- In a large bowl, combine the chocolate and cereal until the cereal is completely coated.
- Transfer to a 9-inch springform pan.
- Press the mixture into the bottom and 1 inch up the sides of the pan.
- Freeze just until firm, 5 to 10 minutes.
- Spread the ice cream in the prepared crust and freeze, covered, until firm, for at least 2 hours and up to 3 days.

This was a real crowd-pleaser and a perfect summer treat for a Fourth of July party. I needed to use sugar-free ice cream but couldn't find mint chip; sugar-free brownie sundae worked perfectly and nobody guessed it was sugar-free. I did increase all the measurements by a bit just to make it a very 'full' pie...10 oz choc chips (I used half semi-sweet and half milk chocolate), 5 c. cereal and the entire carton of ice cream (1.75 q)...worked great in my 9x3" springform. The crust was a bit trickier to form than I'd anticipated (guess that's because I'd only ever used Rice Krispies to make marshmallow treats and those are always sticky!). It just took a bit of finesse and patience to get it all into place. I also melted a bit more chocolate and drizzled it over the top. It looked gorgeous and went so quickly that I had people come up to me, disappointed that they hadn't gotten a slice and already requesting that I bring it next time.
