- 24 wonton wrappers
- 15 1⁄4 ounces corn (drained)
- 16 ounces black beans (drained and rinsed)
- 16 ounces kidney beans (drained and rinsed)
- 8 ounces salsa (we like Herdez)
- 1⁄2 cup cilantro (chopped or optional)
- 1⁄2 cup green onion (chopped or optional)
- 1 cup cheddar cheese (shredded)
directions
- Sray 24 mini muffin cups with non-stick vegetable spray; press a wonton wrapper into each cup, bake at 350 for 10 min.until crisp.
- Mix together corn, beans and salsa; spoon into cups, top with green onions, cilantro and cheese.
- Enjoy.
