  • In a medium glass bowl stir together sugar, cocoa, cornstarch and salt. Gradually stir in milk.
  • Microwave on high for 5 minutes, stirring once halfway through the cooking time. Continue to cook on high for an additional 2-3 minutes or until the mixture has thickened. Stir in butter and vanilla.
  • Pour into individual serving dishes. Cover and chill.

  1. This recipe work's well. I was surprised to find that the pudding never boils but just heats and thickens in the micro. I used skim milk and whisked in 1/2 a cup of Splenda with the vanilla (skipped the butter entirely). However the flavor wasn't what I had hoped for. I'm very well used to the skim milk and Splenda and that wasn't the problem. I rather think that it was the taste of the cornstarch which never really cooked that dulled the outcome in the taste. I should also say that I added about 1/2 a tsp of cinnamon with the cocoa. Thats something I always do with chocolate pudding. It is quick and very easy but I think that allowing the cornstarch taste to cook down would help.
