  • In bowl, mix uncooked beef, beans, chili powder, and oregano.
  • Spoon into uncooked manicotti shells.
  • Place in greased 13x9 baking pan.
  • Mix water and sauce, pour over manicotti.
  • Cover and refrigerate 8 hours.
  • Remove from refrigerator 30 minutes before baking.
  • Cover and bake at 350* for 1 hour.
  • Uncover. Sprinkle with cheese, onions, and olives.
  • Bake for 8 minutes more.
  • Then add sour cream.

  1. This is a wonderful delicious meal. I used Gluten-Free Manicotti, GF Siete refried beans and Pace's Picante Sauce (medium), and 100% Grass-Feed beef (little or no grease, ever). Since I only cook for myself, I have decided to make this again but will use other GF Pasta and spoon it over already cooked pasta and or make enchiladas with it. I did not use any sour cream or olives - I like both but decided not to use. **So yes, I will definitely use this again.**
     
  2. Can this dish be prepared, uncooked and frozen except for the sour cream? Looking for recipes that can be frozen, defrosted and the baked.

  1. What a great do ahead dish! I was a little concerned about using the raw ground beef, but it turned out fine! I used 2 cups of shredded Taco cheese for the topping because I love cheese! This dish puts "Taco Bell" in the dog house!!
     
  2. Good heavens, the dish definitely has a Mexican/Southwest flair, so the name fits it. Made it last night, and it is fabulous, easy, and worthy of company. I did tweak it a bit, however as follows: added 1 heaping teaspoon of McCormick's Chipotle pepper powder as well as the heaping 3 teaspoons of regular chili powder, used refried beans with green chiles, added a couple of tablespoons of hot sauce to the picante sauce/water mix, and I topped it off with lowfat sour cream and pepper jack cheese. It was to our taste for spicy (we like food hot). I intend to try it with ground pork, chipotle salsa in place of picante sauce, and even more chipotle pepper powder. There are many ways to tweak this recipe - it's excellent.
     
  3. I've made a similar recipe for years and everyone always loves it. The only differences are that I brown the ground beef before adding the refried beans and seasonings, and I do not refrigerate the stuffed shells before baking. Great recipe.
     
  4. This was delicious!! Everyone thoroughly enjoyed it. After baking I topped it with the Monterey Jack cheese and had all the other ingredients (more Jack cheese, sliced green and black olives, sliced scallions, hot peppers, and sour cream) already prepared and in bowls on the table so my guests could top their manicotti with their favorite toppings. I served it with a nice salad full of fresh veggies and some of my dads home made bread (He makes the best potato bread ever). You are really missing something if you pass by this recipe. I had everything chopped and in bowls ahead of time. I prepared the manicotti in the morning before I went to work... then just popped in the oven and enjoyed cocktails with my guests while dinner took care of itself.

  2. I made the recipe pretty much as written. The only change that I made was I took the leftover meat/bean mixture (there was a lot) and mixed it with the picante sauce in an attempt to thicken the sauce, which was too watery. Refrigerated and baked it per the instructions. The manicotti were soggy, and the dish had an unpleasant taste to it. I think it might have been the combination of the hamburg, chili powder, oregano, and the refried beans that I used. Just didn't care for the taste. I probably should have precooked the hamburg as some others did. Just wasn't a good fit for us. Disappointed.
     
  3. I've made this so many times that I can't believe I forgot to review it! I LOVE this recipe. I've taken it to potlucks and passed it onto family members; everyone wants to take home the leftovers (if there are any). I only made a few minor changes: since I'm veggie, I subbed black beans for the beef (rather than just omitting), and I added 1/2 t each garlic powder and cumin to the bean mixture. YUM!

  5. Used Mexican blend cheese in place of the Monterey Jack and added more cheese to the top too. Just ok? Not in my house! It was excellent! If you don't want to stuff the manicotti, you can use ziti and just put the meat and sauce and cheese on top of the noodles and bake. Why frustrate yourself if you don't like stuffing shells :) Thanks for sharing!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
