Meatball Casserole

"My family loves the "Jumbo" meatballs! Have you ever made stuffed cabbage, just to have the kids toss out the cabbage and just eat the meat? Your kids will be happy to see no cabbage here. My kids loved it served with mounds of mashed potatoes. Prep time may be less."

  • Combine meat, oatmeal, milk, onion flakes, salt and pepper.
  • Mix well, shape into 8 large meatballs and place in 2 quart casserole.
  • Combine catsup, vinegar, water, and sugar and pour over top of the meatballs.
  • Bake at 350°F for 1 1/2 hours.

  1. My picky 4 y/o loved this, my husband enjoyed too. Prep time is only about 10 minute, very easy recipe. I served this with mashed potatoes, though I think next time I may double the sauce ingredients and serve over noodles. Thanks!
     
  2. Oh my! I just realized I haven't rated this (not sure how I missed that!). I found your recipe in 2004 right after I joined and it's a been a monthly addition to our menu. We just love it! My dh always says "Oh YES those giant meatballs!!" when I make these. I've used ground turkey with much success, but prefer a 50/50 turkey/beef mix.
     
  3. I have a meat loving family, so I'm always looking for new recipes that involve hamburger and this was NO dissapointment. I actually didn't have any onion flakes so I finely chopped a small onion and it turned out great. I used one of the above reviews suggestion and doubled the sauce ingredients and served it over baked pototoes. Sounds strange but it was really good.
     
  4. This was nice and so easy to do. I did make a couple of changes to make this a WW Core food. I used 7%lean ground beef, non-fat milk and left out the sugar in the sauce. I also made the meatballs a bit smaller ( 2 inches) and it was done after 65 minutes. The sauce was a nice consistancy and I could imagine how great it would be with the sugar but it really doesn't need it. My 4 year old loved it too and therefore forever on my make often list. :)
     
  5. All I can say is yummy!!!!I ran out of ketchup so I used regular bbq sauce, it was awesome.

I love to cook, but don't have a lot of time to do it, since I work full time. I like to try a new recipe every Saturday, if time allows. <br> <br>I have one grown son and three grandaughters ages 16,10 and 3. The ten year old has won many medals in gymnastics meets over the past few years.
