Maple Buttermilk Bread (Bread Machine)

• 1 1/2 pound loaf

• 1 cup water, plus
• 1 tablespoon water
• 1 1⁄2 tablespoons unsalted butter, melted
• 3 tablespoons maple syrup
• 3 cups bread flour
• 1⁄3 cup dry dry buttermilk
• 1 tablespoon gluten
• 1 1⁄2 teaspoons salt
• 1 3⁄4 teaspoons fast rising yeast (or 2 1/4 t. bread machine yeast)

• 2 pound loaf

• 1 3⁄8 cups water
• 2 tablespoons unsalted butter, melted
• 1⁄4 cup maple syrup, plus
• 1 tablespoon maple syrup
• 4 cups bread flour
• 1⁄2 cup dry dry buttermilk
• 1 tablespoon gluten, plus
• 1 teaspoon gluten
• 2 teaspoons salt
• 2 1⁄4 teaspoons fast rising yeast (or 2 3/4 t. bread machine yeast)

directions

1. Add all ingredients to the bread machine pan according to the order in the manufacturer’s instructions.
2. Set crust on medium and program for the Basic cycle; press start.
3. When the baking cycle ends, immediately remove the bread from the pan and place it on a rack; let cool to room temperature before slicing.
