ingredients
- 2 mangoes, diced
- 1 pint strawberry, diced
- 1 small red onion, diced
- 1 (8 ounce) can Rotel tomatoes & chilies
- fresh cilantro
- fresh lime juice
directions
- Dice fruits/vegetables, add cilantro and lime juice. Mix together and chill well. Serve with corn chips.

Thank you for sharing your lovely recipe Chef Reba. We enjoyed this sweet, and spicy salsa with corn chips. I couldn't find canned Rotel tomatoes, so I used canned diced tomatoes which didn't work so well, they ended up kind of mushy. To the tomato mixture I added a whole, finely chopped jalapeno, which worked well in this dish. Next time I make this I will dice up fresh tomatoes instead. Made for Pac Spring Safari 2013.
