Salad
- 3 cups shredded carrots
- 1 (11 ounce) can mandarin orange segments, drained
- 1 cup halved green seedless grape

Dressing
- 1⁄2 cup low-fat orange yogurt
- 1 teaspoon cider vinegar
- 1⁄4 teaspoon ground ginger
directions
- Combine all salad ingredients in a serving bowl, mix well.
- Combine dressing ingredients; whisk to blend thoroughly.
- Pour dressing over salad and mix well.
- Refrigerate for several hours.

Very tasty and very, very good for you! It had my BF's two favorite fruits (mandarin oranges and grapes), plus I had a bag of leftover shredded carrots so I just had to try this recipe! Made my BF happy too. I used red grapes, vanilla non-fat yogurt and threw in some leftover scallions (as per other reviewers' recommendations). I also put in a dash of salt. Can't wait to eat leftovers tomorrow for breakfast:D Maybe I will add a tad more vinegar, but I have nothing but great to say for this recipe as is!

I really enjoyed this carrot salad, nice and light with a good combination of fruit and a touch of ginger. I used yoplait orange creme yogurt but am sure vanilla would also be good. A healthy dish to try on the kids as well. My kids avoid carrots like the plague but ate some of this voluntarily (that's high praise). Thanks, PaulaG, for a great recipe!

I used 3 carrots which made 4 cups of shredded carrots. I thought I had oranges but didn't so I used canned grapefruit which gave it a tarter taste. The orange yogurt I couldn't find so I used plain. And I used ginger preserves which sweetened it up a bit.I keep trying to find that carrot salad that I would enjoy and this was up there. I `m not a fan of carrot salad but I must say this is 5 stars from all the ones I've had to date.

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called.
Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com.
Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net.
Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
