ingredients
- 2 cups jicama, diced
- 1⁄2 cup craisins
- 1⁄2 cup walnuts, chopped
- 4 stalks celery, sliced
- 1⁄2 cup low-fat mayonnaise
- 3 tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- water, to blend
directions
- Mix all ingredients except water. Add water to thin mayonnaise.
- Refrigerate to blend flavors. Adjust seasonings.

I usually get the crunch into these salads with celery, but the addition of jicama was GREAT, but rather than dicing it I made narrow, short sticks about 1 1/2" long! Also used a rounded 1/2 cup of craisins, 'cause I like 'em ~ All blending together very nicely for a great tasting salad! [Made & reviewed for one of my adoptees in this Spring's Pick-A-Chef]
