  • In a medium saucepan bring 4-6 cups water to a boil.
  • Roughly chop the cauliflower and cook in the boiling water until tender. About ten minutes.
  • Strain cauliflower and squeeze out as much water as possible. I pour the strained cauliflower onto a clean kitchen towel and twist to squeeze out any excess water.
  • In a food processor, add cauliflower, butter, cream, salt and pepper and blend until smooth.
  • Pour cauliflower mash into casserole dish and top with cheddar and crumbled bacon. Cook in a 350° oven about ten minutes until cheese is melted.
  • Serve with green onions on top.
