- 1 head cauliflower
- 2 tablespoons butter
- 1⁄4 cup heavy cream
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄2 cup sharp cheddar cheese
- 2 slices bacon, crumbled
- 1 tablespoon green onion
directions
- In a medium saucepan bring 4-6 cups water to a boil.
- Roughly chop the cauliflower and cook in the boiling water until tender. About ten minutes.
- Strain cauliflower and squeeze out as much water as possible. I pour the strained cauliflower onto a clean kitchen towel and twist to squeeze out any excess water.
- In a food processor, add cauliflower, butter, cream, salt and pepper and blend until smooth.
- Pour cauliflower mash into casserole dish and top with cheddar and crumbled bacon. Cook in a 350° oven about ten minutes until cheese is melted.
- Serve with green onions on top.
