- 1⁄2 cup green onion top (not the white part of the scallion)
- 3 tablespoons butter
- 6 eggs
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
directions
- Sauté the green onion tops in butter until wilted.
- Add the whole eggs to the pan over medium heat and stir them until scrambled.
- Season with salt and pepper.
- She doesn't scramble them before she puts them in pan; this makes a denser scrambled egg and seems to make a big difference to my husband.

Sometimes we get so caught up in things that we often forget the simple pleasures in life. This is a very basic recipe that lends itself to various options. I for one used egg substitute and added just a touch of milk. The eggs were topped off with green onion tops as suggested in the recipe. It was served with fresh fruit and a toasted muffin for a nice and easy breakfast on a busy morning.

Dienia my thanks to your MIL for a great breakfast just loved to taste of the fresh spring onion with the warm scrambled egg, the only change I made for to use a little olive oil instead of butter to make it dairy free otherwise made as directed and thoroughly enjoyed by all.
