ingredients
- 1 reduced fat graham cracker crust
- 8 ounces fat-free whipped topping, thawed
- 1 (3 1/2 ounce) box pistachio pudding mix
- 20 ounces crushed pineapple with juice
directions
- Mix thoroughly the whipped topping, pudding powder and drained pineapple. pile into crust, chill (I would guess 4 hours or so) or freeze and enjoy!

Well..... I LOVE how simple, fast & easy it is to prepare. i like the flavor. nobody else in the family will eat it, though. :( I'm really not sure what the problem is except that older dd doesn't like nuts & the pistachio pudding mix has almonds in it. I figured younger dd would have eaten it all but she had 1 piece & hasn't gone back. dh....just not interested. i love the technique. I'm wondering if i use a different flavor pudding? many apologies, Smelly, because I HATE giving less than stellar reviews. :( Made for 7/11 Veggie Swap.

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!
To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
