Lentils With Noodles, Onions and Tomatoes: Syrian Rishta

- 29.58 ml olive oil
- 1 large onion, finely chopped
- 2-3 garlic cloves, finely minced
- 236.59 ml lentils
- 473.18 ml unsalted chicken stock
- 3 large plum tomatoes or 236.59 ml drained italian canned tomato, coarsely chopped
- 29.58 ml tomato paste
- 1.23 ml hot pepper flakes
- 1.23 ml ground cumin
- 2.46 ml ground allspice
- 2.46 ml ground coriander
- salt & freshly ground black pepper, to taste
- 226.79 g tagliatelle pasta noodles or 226.79 g fettuccine pasta
- 4.92 ml lemon juice
directions
- Heat the oil in a 5-qt nonstick Dutch Oven and saute the onions and garlic over low heat, stirring constanly for 5 minutes, or until the onions are soft and begin to brown. Stir in the lentils and add the chicken stock. Bring to a boil, lower the heat, cover and simmer for 15 to 20 minutes. Then stir in the tomatoes, tomato paste, hot pepper flakes, cumin, allspice, coriander, salt and pepper. Simmer for 10 to 15 minutes more, or until the lentils are soft but hold their shape.
- Meanwhile, boil and drain the pasta. Transfer the lentils and pasta to a large warm serving bowl. Sprinkle with lemon juice and toss lightly. Serve hot.
- Note: Rishta or "threads" are thin, ribbonlike fresh homemade pasta.

Reviewed for NA*ME's Dish of the Week - I loved this recipe! I used 5 cloves of garlic as we're garlic fiends in this house, used just a tunt pinch of pepper flakes & I also used homemade arab noodles but stuck to the rest of the recipe. We all enjoyed this rishta (16 month old DD had a LOT of fun with this!) & it makes a nice change to our regular Algerian Rechta (rishta). Thanks for a delicious recipe!

This was quite tasty. I doubled the garlic and next time I would add some more tomatoes than the recipe calls for as they tasted fantastic. This dish really had a silent kick to it - about halfway through I could start to feel the heat. I thought that I had fettuccine pasta in my cupboard but I didn't so I used linguine noodles and it was good but I could see where thinner noodles would be better. Thanks so much for posting a keeper recipe!
