  • 1 cup brown rice, cooked
  • 1 cup lentils, cooked
  • 2 medium onions, sliced into strips
  • 3 medium carrots, diced
  • 1 cup Baby Spinach
  • 1 tablespoon oil
  • 3 tablespoons balsamic vinegar
  • salt and pepper

directions

  • heat oil, add onions and cook for 15 min until black.
  • ad carrots (4 min), stir in spinach.
  • combine rice, lentils, and veggies with vinegar and salt.
