Lemon Walnut Green Beans

"This recipe was in a Horizon Blue Cross Blue Shield of NJ mailer. It sounds good however, I haven't tried it yet. I cut the original recipe in half."

  • Cover and steam green beans in steamer basket over boiling water for 8-12 minutes.
  • Plunge beans in cold water to stop cooking process.
  • Spray a skillet with cooking spray.
  • On medium-high heat saute green onions until tender.
  • Add green beans, walnuts, rosemary and lemon juice.
  • Cook until everything is thoroughly heated.
  • Place is a serving dish and garnish with lemon zest.

  1. This was pretty good. I didn't want the rosemary or lemon to be too strong. So i put in one "twig" of rosemary whole, during the cooking, and took it out after. so that the beens have a hint of rosemary. Also I left out the lemon zest I felt this would make it too lemony. The dish came out pretty good. If I make it again, i think i'll use different flavors, but this is a very nice technique for cooking green beans.
     
  2. I would have gone with no-stars because I don't think I can rate this one, but I can't seem to get the no-star review to post. Therefore, I'll go with this format. I think my rosemary may have ruined this dish--either that or I don't like the taste of rosemary in green beans with lemon. It tasted musty. I would suspect the herb, but it looked fine when I took it out of the package so I don't know. I'd suggest toasting the walnuts first as a way to enhance their flavor. It's a very pretty dish, and the lemon juice gave a nice, fresh flavor to the beans.
