Lemon Loaf

A simple, pound cake type recipe. Simple and delicious. (I sometimes use a bit less sugar, especially if i substitute brown sugar.)

ingredients
- 1 1⁄2 cups flour
- 1 cup white sugar
- 2 eggs
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 6 tablespoons butter
- 1⁄2 cup milk
- 1 lemon, rind of
- plus glaze ingredients 1/3 c sugar
- 1 lemon, juice of
directions
- Preheat oven to 325-350 F.
- Cream sugar, butter, eggs and milk.
- Sift in dry ingredients.
- Add lemon rind.
- Bake for one hour in loaf or tube pan till toothpick in centre comes out clean and edges are just barely golden.
- Mix glaze ingredients. May be warmed on stove briefly, if necessary, to melt ingredients. Spoon over loaf while still warm--approximately 10-15 minutes after removing from oven.
