ingredients
- 1 lb smoked sausage, cut into 1/4-inch thick slices
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 2 (14 ounce) cans red beans, drained
- 1 cup tomatoes, chopped
- 1⁄2 teaspoon thyme
- 1⁄4 teaspoon cayenne pepper (optional)
- salt and pepper, to taste
- 3 cups brown rice, cooked
directions
- Heat skillet over med-low, cook sliced sausage for about 2 minutes.
- Add onion, garlic, bell pepper & saute till veggies are tender.
- Add beans & tomatoes with their juice, sean with thyme, cayenne, salt, & pepper.
- Serve over rice.
