Lamb Soup With Barley

- 1 1⁄2 quarts chicken broth
- 1 1⁄2 lbs lamb stew meat, cubed
- 1 quart water
- 1 1⁄2 cups sliced onions
- 1 1⁄2 cups sliced carrots
- 1 1⁄2 cups sliced turnips
- 1 cup sliced celery
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon rosemary
- 1 bay leaf
- 1⁄2 cup dry white wine
- 1⁄2 cup quick-cooking barley
- salt and pepper
directions
- Combine all ingredients except barley, salt and pepper in slow cooker; cover and cook on low for 6-8 hours, adding barley during the last 20 minutes.
- Discard bay leaf. Season to taste with salt and pepper.

this is such an easy recipe and so delicious. i used to make this all the time before we moved to florida and lost the cookbook in the move. now that we are back home in Pennsylvania I was trying to find the cookbook. thank you for posting it, it tastes just like Campbells Scotch Broth, but better, rich, meaty and full of vegetables and barley. DH hates barley but loves this soup. sorry forgot the stars in the first review

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN! I have a small (but growing quickly!!) cookbook collection and one of my favorite things to do is to read recipes and plan meals. Rachael Ray, Horn of the Moon and Moosewood are favorites of mine. <br /><br />We spend a lot of time outdoors camping, hiking and backpacking. Yup. I cook in the woods too!
