- 4 large potatoes, peeled and sliced
- 1 package Velveeta cheese, cubed
- 2 tablespoons margarine
- 3⁄4 cup mayonnaise
- 1⁄4 cup sour cream
- 5 slices crisply cooked bacon, crumbled
- 4 green onions, sliced
- 1⁄4 teaspoon pepper
- 1⁄4 teaspoon paprika
directions
- Heat oven to 350 degrees.
- Cook potatoes in boiling salted water.
- Drain.
- Combine potatoes half the cheese and marg and stir over low heat till cheese is melted.
- Add mayo sour cream 2 tbsp bacon 2 tbsp onion and pepper.
- Mix well.
- Spoon into 2 qt casserole dish.
- Top with remaining cheese bacon and onions.
- Sprinkle with paprika.
- Bake for 25 minutes or until heated through.
