- 1 (14 ounce) package kielbasa
- 1 large onion, chopped
- 1 tablespoon olive oil
- 1 (10 ounce) can black beans with juice
- 1 (10 ounce) can diced tomatoes
- 1 (10 ounce) can corn, drained
- 1 (10 ounce) package yellow rice, cooked according to directions
- 1⁄2 teaspoon garlic powder
- 1 teaspoon paprika
- 1⁄2 teaspoon salt and pepper
directions
- Heat oil on high, add the kielbasa and onion. Cook until the onion is tender.
- Add black beans, not drained, tomatoes, not drained, corn, drained, and seasonings.
- Cook to a boil, reduce heat and cook for 5 minutes.
- Add rice and serve!
