  • Peel and boil potatoes; mash with potato water. Add salt, pepper, and cream; whip. Heat sauerkraut and drain. Cook bacon until crisp; reserve drippings. Break bacon into pieces. Mix sauerkraut into mashed potatoes; add bacon drippings and bacon. Blend well and pile lightly into serving bowl. Serve hot.
