Kabab Kubideh - Persian Grilled Ground Meat

Kabab Kubideh - Persian Grilled Ground Meat created by dwayneedhanson

Delicious served with hot rice. This recipe works better if you use flattened skewers so that the meat doesn't roll when you turn it. Overnight chilling not included in preparation time. Use a spacer between the grill grates and the skewers to prevent meat sticking or spray the grates liberally with cooking spray before heating the grill.

My family is Persian and I love Koobideh, Try adding a little saffron water to the meat and also alongside grill tomatoes, onions and banana peppers brushed with olive oil.

My SO is Persian, so I've slowly been taking on Persian food. This recipe was not only unbelievably easy, but he said it was better than his mom's!! Not sure how much of that was truth vs. BS to make me feel good about my first attempt. Regardless, we both gorged ourselves on amazing kabab. I live in an apartment and don't have access to a grill, so i used the broiler and flattened the meat out into strips on a foil lined pan. Cooked for 10 minutes before flipping. Perfect solution if you don't have a grill.

Tasty! This was the first of three different koobideh recipes we tried, and by far the winner. I used a 50/50 mixture of beef and turkey; breadcrumbs instead of flour, and sprinkled sumac over the hot koobideh - freaking delicious!! Thank you for sharing this recipe : )
