Jumbo Raisin Cookies

"Best raisin cookies. Make em big!! Like a cakie cookie. Got this recipe from a local Hutterite colony. GREAT!!"

• Yields: 4 dozen

ingredients

• 2 cups raisins
• 1 cup boiling water
• 1 cup shortening
• 2 cups sugar
• 2 eggs
• 1 teaspoon vanilla
• 1 cup chopped walnuts
• 4 cups flour
• 1 teaspoon baking powder
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 1⁄2 teaspoons cinnamon
• 1⁄4 teaspoon nutmeg
• 1⁄4 teaspoon allspice

directions

1. Cream shortening, sugar, eggs and vanilla.
2. Add cooled raisins, including liquid.
3. Add flour, baking powder, soda, salt and spices.
4. Mix well.
5. Stir in chopped nuts.
6. Drop by spoonfuls on cookie sheet.
7. Bake @ 375 F for 12 to 15 minutes.
8. DO NOT overbake!
