I put a can of creamed corn and a can of green chilies diced into the muffin mix. Put into 11x7 pan. Bake 30 to 35 minutes at 400 degrees. Take out, let it cool for 10 minutes. Poke holes in the finished corn bread with a fork, then add the beef on top. I usually use shredded chicken. Instead of tomatoes sauce I use a can of mild enchilada sauce. Pour that over the burger. Top with shredded pepper jack cheese. Bake for an addtional 20 minutes. FANTASTIC!! ??
