Jiffy Corn Bread Mix Tamale Pie

  • Mix cornbread according to package directions. Cook ground beef and drain fat. Add, taco seasoning mix and water according to package. Add tomato sauce. Cook until slightly thickened. Pour meat mixture in a 8x8 cassarole dish. Add layer of grated cheese and then spread the cornbread mixture on top spreading it to the edges of the pan. Bake at 350 degrees for about 45 minutes or until brown.
  • Optional: serve with sour cream and taco sauce.

  1. Nice recipe for a quick easy meal. I added frozen corn and a can of diced tomatoes with green chili’s to the meat. The cup of cheese I put in the cornbread was jalapeño cheddar.

Tweaks

  1. One of our favorite dinners-so easy to make & so few ingredients needed! I alter the recipe by adding salsa instead of the tomato paste, and add about a cup of frozen corn to the meat mixture.
     
  2. I put a can of creamed corn and a can of green chilies diced into the muffin mix. Put into 11x7 pan. Bake 30 to 35 minutes at 400 degrees. Take out, let it cool for 10 minutes. Poke holes in the finished corn bread with a fork, then add the beef on top. I usually use shredded chicken. Instead of tomatoes sauce I use a can of mild enchilada sauce. Pour that over the burger. Top with shredded pepper jack cheese. Bake for an addtional 20 minutes. FANTASTIC!! ??
