  • Mix together honey, vinegar, whiskey, thyme, lemon zest, oil, salt and pepper. Pour over salmon and marinate 1 hour on the counter, or 4 hours refrigerated.
  • Preheat oven to 450°F.
  • Remove salmon from marinade and place on a rack over a roasting pan.
  • Grill or Bake for 10 to 12 minutes, basting once with the marinade or until golden and white juices are just beginning to appear.

    1. Jameson Whiskey is a good one to use with this recipe. 2. Make extra marinade, reduce it to half and add a tablespoon of butter, Irish butter is appropriate. 3. We cooked ours a little longer, served with roasted baby potatoes and had some whiskey to follow it. Sorry no photos, but it was awesome! A real keeper of a recipe.

    How much salt and pepper? What you add to the marinade to make it taste right could be different than what actually tastes right on the fish.
