ingredients
- 1⁄2 cup Bisquick baking mix
- 2 tablespoons margarine
- 1 teaspoon pumpkin pie spice
- 1⁄4 teaspoon clove
- 1 cup evaporated milk (or milk is fine too)
- 3⁄4 cup sugar
- 2 eggs
- 1 teaspoon cinnamon
- 3⁄4 teaspoon ginger
- 1 can pumpkin (2c)
- 2 teaspoons vanilla
directions
- Mix all ingredients in blender& pour in pie plates to bake.
- 50-55minutes@350.

This was so popular in my household I've made it twice in four days! I modified the recipe to accommodate our healthy diet--used egg substitute, Splenda, and omitted the margarine. It wasn't missed. I mixed this up in my blender and just threw it in the oven--so easy! This recipe also doubles easily. I will be making this again and again...thanks so much for posting!

I am not sure what the other person didn't like about this recipe, but I surely loved mine. When I make anything pumpkin I only use pumpkin pie spice. I find that sometimes the spices over powers the pumpkin flavor, in my opinion. Thanks for sharing this recipe. I looked high and low for the recipe and I am glad you had it posted. Thanks again! mmmmmm good!

My DH & i moved closer to where he works, next door to his parents so we are there to help them when they get older.
I like to cook experiment with foods, so i will have more time for this.
